Best whipped shortbread recipe and Toblerone whipped shortbread recipe

Yeah, I know, there's a bazillion shortbread recipes out there, and here's why these 2 recipes are gonna make you the star of your Christmas cookie exchange, or have your significant other doing their est sad puppy dog eyes look so you will bake them again and again.  The tips and tricks section below is an amalgamation me experimenting and baking multiple batches with different amounts of cornstarch as well as baking at different temps in 25F increments from 275F-400F and 100+years of combined experience of 3 fellow traditional shortbread bakers I know of.  Man, some are so fervent about shortbread, they nearly it my head off when I suggested adding in things like Toblerone... they changed their minds after they tried some of my Toblerone whipped shortbread lol! Both whipped versions are a take on the dense bricklike decadent bites of yumminess. Whipping/beating the dough until it resembles buttercream frosting more than a cookie dough = lots of air incorporated into the dough = a cookie that will literally melt in your mouth like a cloud.  So whether you like it traditional or ultra decadent with bits of Toblerone throughout... enjoy!

Tips and Tricks
Butter
1) I like using Lactancia cultured butter as it gives better flavor, but butter must sit at room temp for a few hours to soften -cultured butter can stay at room temp overnight - or its really hard to whip 
2) whipped shortbread is essentially buttercream icing with the cornstarch to stabilize the flour so the cookie doesnt crumble like crazy when you try to pick it up after its baked... so the tinny bit of salt in salted butter is negligible
3) Do not use margarine as it changes up the taste profile... and have traditional bakers poke at you with pitchforks.  If you are short on butter and must use margarine, don't sub out more than 50% of the butter, and never use low cal, light or whipped margarine as it has too much water content and your cookies will resemble asphalt
Sugar
1) Do use icing sugar and not regular sugar. The powdered form of icing sugar gives the whipped shortbread the airy, melt in your mouth like a cloud mouthfeel... As does all the air you incorporate with the long mixing time.
Flour
I buy my flour pre-sifted as I'm lazy/ efficient. Sifting it gets rid of large lumps, and makes it easier to add air to the batter as the mixer doesnt have to break apart the flour lumps
Toblerone chopped size
1) You can use other chocolate if you have allergies, but Toblerone does really make these cookies decadent and over the top
2) If you are Martha-Stewart OCD and want to pipe out the cookies with a nice icing tip to make the cookies look nice, make sure you finely chop the chocolate into pieces no bigger than what can fit out of your icing tip, or just pipe out the cookie dough and embed a large chunk in the middle of the cookie
3) Personally, I like a rough chop with a knife as you get fine bits that blend into the cookie, and larger chunks that form pockets of melted yumminess... I chop the Toblerone pieces no bigger than 1cmx1cm chunks
To cookie scoop or to drop cookie...
1) if you want a fancy pants cookie, you can scoop batter into an icing bag with a large bore icing tip and pipe out the batter into circles with spirals 
2) If you want the traditional "dome" look, scoop out the cookie dough with a cookie scoop -if you are low on time or like a homemade look, scoop with a spoon and drop the cookie onto the cookie sheet -if your oven is hot and your cookie dough starts to get runny, pop the dough into the fridge for a few minutes before scooping/piping
How long to bake cookies and oven temp
1) shortbread traditionally isn't supposed to have golden bottoms (sacrilege!), but its not the end of the world if you do.. Still tasty! The lower the heat, the longer it takes to bake, but less likely you'll "ruin" the cookies by overbaking it. The lowest I've personally tried baking these cookies are 275F for 30-35 min. But when you need to make multiple batches during Christmas baking time, as long as you are ok with maybe overcooking your first batch (all ovens vary a bit with temp), you can bake them at 300F for 18-20min. I've tried temps as high as 400F, for 8-10 min which is super fast for baking time , but I find the edges (if not whole cookie) is a crispy golden brown.
Do I have to use parchment paper if I'm using a good non stick cookie sheet?
1) If you want to transfer the cookies with out them breaking/ crumbling as they are super delicate and save your sanity, a unch of swearing (and your waistline), yes.
2) Tin foil works, but transfers too much heat so you may get odd overcooked spots on bottom of cookies. Wax paper works too, but I personally hate how the wax smokes in the oven and I'm always afraid of it going up in flames if I reuse the same sheet for subsequent batches.

Ingredients
1 cup salted or unsalted butter at room temp
0.5 cup icing sugar
0.25 cup cornstarch
1.5 cups all purpose flour, sifted
1.25 cup Toblerone chopped (exclude if you want traditional whipped shortbread)

How to
1) Move oven rack to 2/3 up in the oven (level you usually bake cookies and muffins on). Preheat oven to 300F.
2) In a mixer with a large deep mixing bowl and paddle attachment (ideally not a hand held one as you'll be holding it for a while), whip together the icing sugar and butter on low (keeps the sugar clouds exploding all over kitchen down to a minimum) and once incorprated, crank the mixer on high for 10min, scraping the sides of the bowl every now and then with a silicone splatula -the batter will be very light in color and fluffy like icing.
3) turn the mixer on low, and add in the cornstarch and flour to the sugar-butter mixture. Once mixed in, turn the mixer on high, scraping down the sides of the bowl with a silicone spatula occasionally and mix for another 5 min. If you walk away and mix for longer, it's ok. The batter should resemble super fluffy icing.
4)Turn off mixer, and fold in chopped Toblerone with a spatula. Using a small cookie scoop or a teaspoon with a generous gob of dough, place cookie dough on parchment paper lined cookie sheets 1inch apart and bake for 18-20min. They are done when you can lightly tap the top of the cookie and the dough is set and not liquidy.
5) Let the cookies rest for 10min on the cookie sheet and then transfer cookies to a cooking rack. If the bottoms are starting to overcook, or you are afraid to break the cookies, lift parchement paper with cookies and place the whole thing onto a cooling rack-that way you dont have to transfer them one by one risking breakage. Once cookies are cool, they wiill set and be more firm and you can transfe to gift boxes or air tight containers with parchment paper inbetween layers to help prevent breakage. I eat all the blemished/broken cookies... Feel free to do the same. Enjoy!!

Gama Cafe, Edmonton, A - new location, tasty desserts and buttery foam topped tea!

With the summer days being deliciously warm, we went a few times to Gama Cafe to pick up drinks to cool off and desserts in the evening.  Noone wants to stay inside on a warm muggy summer day and chillaxing in Gama's new location with chic boutique look and feel is just the ticket.  They've even taken the buttery foam they put on their gama teas and incorporated it into desserts and thick toast (think French toast but better!) They have hot food like risotto and pasta now too, but we've always went for drinks and dessert since they opened, even when they were at their original location, so...onto the drinks and dessert!

For a recent lunch in Calgary, we went with my cousin and his fiancĂ©e to Sushi Kimu, a little hole in the wall sushi joint they recently stumbled upon in the NE.  The spotlight is their sushi rolls which has a lot of fusion choices as well as some creative ones... onto the food!

Chef Roy Oh opened the original location back in 2008, and now has moved to new digs and swank decor at 344 17 Ave SW.  Its a place with a well thought out drink/cocktail menu to pair with an extensive tapas menu, and with the open kitchen and modern dark woods, korean kimchee jars and open feel- its a happening and welcoming place.

A few months before the big day, we headed over to Urban China to try out a more adventurous menu than usual... we had a big group and were indecisive, so we ordered a Chinese set meal for 10 randomly off the menu. Could we read the menu? Nope! Did we have any idea what we were going to eat - nope! Was it adventurous and tasty? Yup!

Bread +/- meat/protein + sauce +/-veges = sandwich. An equation that worked awesome in kitchens and lunches since someone invented sandwiches by slapping bread and probably cheese or sausage together hundreds of years ago.  It can be simple, it can be complex but sandwiches are a go-to comfort food for many and since we were hearing good things about Sandwich and Sons (and an epic BLT with a tower of bacon on their menu), on a random Saturday we stopped by to have lunch.

All the lingerie, pre-drinking and snacking on tasty fare took place at KimChee's place and we made our way eventually to Cactus Club after figuring out all the designated drivers. Onto the food!

Grilled salmon macaroni salad recipe and traditional macaroni salad recipe!

One of my favorite pasta salads year round has to be the humble macaroni salad. Its super easy to toss together and makes a great side or meal. It resembles nothing to the limp sad ones you see at buffet tables when you were a kid... macaroni salad recipe I have below is a taste of summertime fun and the grilled salmon version is a tasty twist on the classic... and a great way to use up leftovers! Just remember, just as with any other salads made with mayo or miracle whip, keep refrigerated and toss in the garbage if its been sitting out longer than 2 hours.

We had a giftcard burning to be spent so we called up some friends and headed to family friendly Red Robin for tasty burgers and eats.. but mainly for the tasty burgers and the fact you can bring young squirmy toddlers and babies along and you fit right in with other young families, dating couples and seniors alike! I put in some burgers we tried another time with hubby on an impromtu date night, so its a larger longer post with lots of pics!

Gasthaus Krombach - Traditional brewery pub In the heart of Berlin, Germany!


FiancĂ© around Christmas time went to Germany with his family and while in Berlin, they hit up Gasthaus Krombach.  The Gasthaus Krombach is located in a prime location of Berlin, near the KurfĂĽrstendamm. They have a  wide range of German cuisine and Berlin specialties and six different varieties of draft beer.... onto the beer, sausage and food!

Spam musubi recipe - American Hawaiian classic - with egg and without!

I still remember the first time my Aunt from Hawaii visiting and hunting out a can of spam so she could have it for breakfast.  The glistening pale pink blob that came out of the can resembled more of a hideous Hollywood monster brain goop than food.  But Spam is long in its history and whether you love it or hate it, its rendition into Spam musubi on the Hawaiian islands is a traditional delicious (if incredibly unhealthy) snack or breakfast. Spam - a "spiced" tinned ham that really doesn't have any spice other than salt and nitrate, wove itself into American history as it was eaten as protein during WWII by the military and American families alike.  It's ingenious in its making as there's so much fat blended in, you can pan fry it up without oil, eat it straight from the can, or cut it thin and fry it into bacon like strips that is missing the smoke.  Plus, it was cheap and it had long shelf life in transportable tins which made it ideal for the military.  Its so popular in Hawaii, its been dubbed the "Hawaiian Steak", and in Oregon, they even have a Spam parade!

Golden Rice Bowl Edmonton, AB - traditional Chinese meal with shark's fin soup, deep fried pigeon...

A few weeks back, we stopped by Golden Rice Bowl as we had planned to have a 12-15 course meal for our wedding reception and Miranda, the owner of GRB graciously asked us to have a trial of some of the dishes that we'll be having.  We had a huge list of gluten free, nut free and vegetarian requests on top of traditional and not as traditional menu requests which they were able to accommodate with their wide selection of dishes on their extensive menu. We only tried five dishes for dinner and packed much of it home...if we were to have tried all the dishes we were planning for the wedding, we'd have to try over 40 dishes!

One day to see Schloss Hohenschwangau, MarienbrĂĽcke, Neuschwanstein Castle in Schwangau, Fussen, Germany and local eats! Part 2

After a full day of sight seeing, hiking and tours of the Schloss Hohenschwangau, MarienbrĂĽcke and Neuschwanstein Castle in the last post, we made our way back to Fussen, and we had dinner at Hotel Dreimäderlhaus Weissensee FĂĽssen.  Apparently they have great views, but it was dark by the time we found them, and the next morning was a nice wall of fog, but at least we got to eat a hearty meal where all the locals eat in town!

Fatburger Edmonton - huge made to order burgers

If you're wondering why the sudden spurt of burger joints on the blog - been craving them during the months leading up to the wedding... which isn't doing any favors for my waistline, but hey, getting in lots of manual labor exercise with landscaping the side yard so not feeling too guilty about it. The gown has a lace-up back too so it'll be more forgiving heehee! Anyhoos, so on a weekend where we were planning to hit up The Burger's Priest, they were closed for some reason, so we hit up Fatburger instead to satisfy our burger craving. We did eventually hit up The Burger's Priest - (review here).. onto the burgaaaaaaaaas!

Congee Queen Scarborough, ON - awesome comfort food congee and other tasty Chinese eats!

On one of the last nights in Toronto during the Easter long weekend, I think we're making it a tradition now - we stopped at Congee Queen for some quintessential Chinese confort food - Congee! And fried rice and... well, you get the picture.  Staff is friendly, the kitchen is quick and the restaurant is elegant in warm woods, browns and golds.  We went around the table and my family just picked whatever they felt like eating... and since we all love carbs, and carbs usually play an integral part of comfort food.. bring on them carbs baby!! :D Onto the food!
