Carrot cake cupcake recipe - with pineapple and coconut or walnuts!

Its Spring!! or at least I keep on telling myself that… the weather doesn’t seem to want to cooperate half the time, so I decided to make something Spring-y in the kitchen, or oven :P Felt like cupcakes, so as the Easter bunny was just by a few weeks back… its carrot cake, with pineapples for sweetness and icing to balance out the low fat healthy goodness. Mind you, if you’re allergic to nuts, swap out all nuts in recipe with shredded coconut… you’ll be getting a ridiculous amount of fibre, but as coconut naturally is high in fat.. well, at least recently folks have been getting on the coconut oil wagon, so guess its not that bad! :D

Cookie Love Edmonton, AB - soft freshly baked cookies... need I say more?

I've been meaning to try out Cookie Love for a while - but work and the craziness of life kept sidetracking me until now - and glad I got to step into this little haven scented full of sugary baked cookie goodness. This franchise is run by Iva and Mike Stone, and its apparent they have the recipe for success as we pondered how many cookies we could possibly eat at one sitting - a few other customers came in to pick up large orders. On to the cookies!

Wild mushroom risotto recipe - easy peasy, just a few ingredients and stiring and you have out of this world risotto side dish, or just eat it by the bowl!

Somedays, I just really crave comfort food. One of my favs is risotto. Its simple, all you need is rice, broth, cheese, maybe some herbs, wine and either a vegetable or seafood and you got a meal. Oh, and a bit of love and time. Here’s my recipe for my fav – wild mushroom risotto. You can just make with whatever mushrooms you have on hand, but adding in a handful of dried mushrooms to the broth really put this risotto over the top. Any any risotto is always worth the time in making… and savoring!

My Empanadas Edmonton, AB – Amazingly crisp, light and flakey Argentinean empanadas stuffed full with tasty fillings

While driving around running errands and on our way to the Italian Centre Shop, our eye was caught by a bright yellow sign. When we realized it read empanadas – my boyfriend nearly did a u-turn to drive back to it as he loves empanadas… especially ones made traditionally. My Empanadas is located on a strip mall on 51 Avenue, where there are vestiges of previous mom and pop shops remain, and a few brave (and tasty!) places remain. The owner - Carlos Stricker, makes all the empanadas from scratch, bringing alive home recipes from Argentina. He’s detail orientated and will obsessively clean off a table before serving you – and yet will run out to help a customer loaded down with an order… with her car door... Chivarly isn't dead!!! But, lets get onto the best unpretentious empanada’s you can sink your teeth into this side of the border. I don't use the label "best" very often, and this one is well deserved.
